French Fries Recipe | Chef Rajnish Brar

  1. FRENCH FRIES RECIPE:
  2. Preparation time: 15 minutes + freezing
  3. Cooking time: 25 minutes
  4. Serves: 4

    Ingredients:-
  5. 5-6 Milly Potatoes, peeled
  6. Salt to taste
  7. ½ tsp Paprika powder
  8. ¼ cup Parmesan Cheese

    Process:-
  9. Cut the potatoes in ½ cm thickness and put them in water for 15 minutes.
  10. In a pot, add water and keep it to simmering temperature, i.e, 80-85*C, and par-boil them.
  11. Once done, drain them in a flat tray and spread evenly.
  12. Deep freeze them for 1-1 ½ hour.
  13. Heat oil in a kadhai at 130*C for first frying.
  14. Remove them from freezer and fry them for about 80%.
  15. Once fried, remove them on a paper towel.
  16. Heat oil in a kadhai at 170*C for second frying.
  17. Fry them completely. Remove them on a paper towel.
  18. Transfer hot fries in a mixing bowl, sprinkle some salt and mix well.
  19. Sprinkle paprika powder and garnish with parmesan cheese.
  20. Serve hot.

    NOTE:-
  21. MILLY POTATOES HAVE EXCESS STARCH CONTENT, WHICH MAKES IT CRISPY.
  22. LEAVING THE POTATOES IN THE WATER RELEASES THE STARCH CONTENT.
  23. PARBOILING THEM ON A SIMMERING TEMPERATURE, COOKS IT EVENLY. PARBOIL THEM ABOUT 20%
  24. FREEZING THEM AFTER BOILING MAKES IT CRISPY AND PREVENTS FROM TURNING BLACK.
  25. DOUBLE FRYING MAKES IT CRISPIER.
